Egg Yolk Compounds Show Brain Cell Benefits

Egg yolk compounds protected laboratory brain cells from oxidative damage.


Researchers at Konkuk University in South Korea have found that certain compounds from egg yolks may help protect brain cells from damage caused by oxidative stress. The findings, published in Food Science of Animal Products, focused on phosvitin phosphopeptides (PPPs), short chains of amino acids that come from phosvitin, an egg yolk protein. Researchers tested whether these compounds could help protect cells when they were exposed to hydrogen peroxide, a substance that can create high levels of reactive oxygen species.

The charges carry severe potential penalties if convictions are obtained. Defendants facing the drug charges could receive at least 10 years in federal prison and as much as life in prison. Those convicted of both the drug and firearms charges described in the indictment could face a minimum of 15 years and a maximum of life in prison. Prosecutors are also seeking forfeiture of more than $49.7 million in alleged proceeds connected to the drug trafficking operation. The money could include funds investigators believe were earned through the sale and distribution of illegal drugs during the years covered by the indictment.

The research team used SH-SY5Y cells, a type of human neuroblastoma cell commonly used in lab studies involving the nervous system. Chicken egg yolk was first treated with heat and mild pressure before enzymes were used to break larger molecules into smaller pieces. Four different treatments were then tested to see which produced the strongest protective effect.

The combination, known as HTMP-TM, produced the best results of all of the treatments tested. Cells receiving this preparation showed greater survival after exposure to hydrogen peroxide than cells that did not receive the treatment. When cells were treated four hours before the hydrogen peroxide exposure, cell survival rose from 57.46% to as high as 76.44%. The researchers also found signs that the egg yolk compounds could help deal with unstable molecules known as free radicals. These molecules can react with important parts of cells and contribute to cell damage. The tested PPP treatment also showed activity related to metal binding and protection against the breakdown of fats caused by oxidation. Those findings suggest that the egg yolk compounds may have several ways of helping cells cope with oxidative stress.

The findings do not mean that egg yolks have been proven to protect the human brain from Alzheimer’s disease, Parkinson’s disease, depression or other neurological conditions. The tests were performed on cells in a lab rather than on people or animals. Researchers said additional studies are needed to determine whether the compounds work in living organisms.

Future research will also need to establish safe doses, how the compounds could be delivered and whether they have any harmful effects. Those questions will need to be answered before PPPs could be considered for use in foods, supplements or other products intended to support brain health. For now, the study provides early evidence that compounds found in egg yolks can help laboratory brain cells withstand one type of chemical stress. Much more research is needed before the same effect can be expected in the human body.
